There’s gold in them thar trees! or maybe just amber. February is time to make maple syrup. When we have very cold nights followed by warm sunny days the sap in the trees starts to move. The sap moves up from the roots carrying sugar for the tree’s buds. If you you capture some of the sap and boil it down you get maple syrup. This is a great activity for the whole family that includes a short hike through the woods down to our sugar shack. Come out to Irvine and experience the whole process!
